Granola Flapjacks

INGREDIENTS

1/4 cup each : cacao nibs, melon seeds, cranberries, flaxseeds, dessicated coconut, sesame seeds.

1/3 cup each : brazil nuts, pecan nuts, almonds, cashew nuts, raisins, pumpkin seeds, sunflower seeds.

1 cup each : mejdool dates, oats

2 eggs, 1 grated apple, 1 chopped banana

Spice : 2 tspn fennel seeds, 1 tspn cinnamon, pinch himalayan salt.

METHOD

Process all nuts and dates in Saladmaster Foodprocessor (cone 3)

Grate apple into eggs (cone 2)

Mix all dry and wet ingredients together (knead banana) with a dash of water if necessary, until you get a pliable soft mixture (not dry or crumbly).

Line badboy with greaseproof paper and firm in the mixture, levelling with back end of a wet spoon until even.  Lightly score with a pizza knife.  Cover.  Turn on badboy, 150 with timer for 10 mins only.

Place under grill, 180, until golden brown – about 10 mins

Leave to cool for approx 20 mins.  Cut out squares and place on a cooling rack. Serve
