I used 1 packet cake mix and the church pan to make this on the stove – no butter or oil.
Mix cake mix (vanilla or chocolate cake mix), with 4 eggs and half a carrot (optional – good for fibre). Grease pan with coconut oil or use greaseproof paper to line the pan. Pour in cake mixture. Cover and cook for about 35 -45 mins (cooked when knife comes out dry).
When cooked, let cake rest for 5 mins then use a palette knife to release cake from pan. Put a plate on top of the pan, turn upside down to take out the cake. Place on a cooling rack until completely cool.
Use a knife and ruler to cut in half. Whip some double cream and layer on one half of the cake. On the other half, spread some strawberry jam and some fresh sliced strawberries. Now place one half of the cake on the other. Can pipe some whipped cream on top. Decorate with more strawberries. Enjoy!
